Cornflake and Marshmallow Lactation Cookies

If you have ever had the Momofoku Milkbar Cornflake cookies then you know how incredible they are! Well I’ve made them lactation friendly! A couple baking tips for these. Use room temperature eggs and butter. Cream the butter and sugar for 3 minutes, all that air makes it fluffy. When you add the eggs you’ll whip it for 7 more minutes! It sounds excessive but its so worth it. Use parchment paper instead of a silicone sheet, it will cook more evenly. Place the marshmallows on top of the cookie as opposed to inside of it, otherwise they will melt on the bottom and not look as pretty lol!

You can always omit the lactation part to make them regular cookies. I like to make these and freeze the balls and then just bake the ones that I need for that day. Don’t forget to sprinkle the extra cornflake magic on top of the freshly baked cookies. Enjoy!!
